Fashion, finance and fierce football loyalties define Milan; raw fish and wasabi, less so. But sushi has settled into the city with surprising ease.

At first, eating this traditional Japanese dish feels like a contradiction. This is Lombardy, after all, a region built on arborio rice, butter and slow-cooked meat rather than rice vinegar and nori.
